Ingredients
- 1 cups quinoa
- 1 cups fresh spinach leaves, chopped
- 1 cup cucumber finely chopped
- 1 cup halved grape or tomatoes
- ½ cup green or red bell pepper finely chopped
- ½ cup carrot finely chopped
- 2 green onions, sliced
- 1/4 cup olive oil
- 1 chopped garlic
- 2 tablespoons lemon juice (1 large lemon)
- 1 tablespoon vinegar
- Salt and black pepper as per taste
- 2 tablespoons chopped fresh coriander
- 1 tbsp. roasted flaxseeds
Direction
In a large saucepan, add 2 cups of water and cook quinoa. Mix vinegar and lemon juice, olive oil, garlic, black pepper and salt in a bowl or keep it aside.
In a large bowl, combine quinoa, spinach, cucumber, tomatoes, red bell pepper, carrot, and green onions.
Pour the vinegar mixture on top of the salad and gently mix it.
Garnish it with roasted flaxseeds and fresh coriander leaves and serve it.
