1 cup uncooked pearl barley
1/2 cup chopped tomato
1/2 cup chopped onion
1/2cup chopped cucumber
1-inch ginger
1 – 2 garlic clove, minced
1/2cup pomegranate seeds
1/2 orange
1-2 toasted walnut
1 tbsp lemon juice
Salt&pepper as per taste
1 tsp balsamic vinegar

Barley Salad
Method

Soak barley in water for 1 hrs. Then simmer it in normal water until it turns soft. Drain and rinse with cold water drain. Cool completely. In a bowl, Combine barley add chopped cucumber, onion, tomato, pomegranate seeds, toasted walnut. In a small cup, whisk together lime juice and garlic & balsamic vinegar, olive oil, pepper, and salt. Pour the dressing over the salad and stir to combine and coat everything in the dressing. Now add orange slices & some green leaves gently toss it.
